Bars To Visit This August in Cardiff

Cardiff nightlife is really a taking a turn for the better, the number of new bars opening this August is amazing. There really is something for everyone, and now that Cardiff has some fresh faces on the scene, those of you who were getting tired of the same old bars on a Friday and Saturday night have something to look forward to.

1. The Alchemist

Cardiff has been calling out for The Alchemist for a while now, and we are thrilled to welcome a new branch on St. Mary’s Street.  Located in the old NatWest Bank, the venue creates the perfect atmosphere for The Alchemist's mastery. The bank vaults located underneath have been turned into private rooms for dining and corporate events, adding a wonderfully Gothic element.

The Alchemist brands itself as The Master of Molecular Mixology, and who are we to argue with that. The drinks mirror the decadent and Gothic décor with everything from their own unique ‘dark arts’ combinations to the classics. Go and experience their weird and wonderful combinations. Prosecco, wine and champagne are also available. Perhaps not the place for you hard-core ale or larger drinkers, but a lot of fun nonetheless.

The Alchemist also offers an extensive food menu serving breakfast, lunch and dinner.

2. The Libertine

Tried and tested in Aberystwyth, The Libertine has now come to Cardiff as its first city the brand has ventured to. Having opened June 19 at the top of the High Street, the cocktail bar is proving popular with everyone.

The Libertine serve a vast range of cocktails all with their own unique twist, for example, if you can't decide whether you want a cocktail or milkshake, The Libertine have the answer with an exciting combination of banoffee and whiskey. However, if you have a personal favourite they will be more than happy to make it for you. The bar also has a happy hour (excluding Saturday’s) which runs from 3pm-7pm, with some cocktails costing £5.

Not fancying cocktails? They also serve tea and coffee throughout the day with cake and tea cakes as accompaniments.

3. Beelzebubs

 A new craft beer bar which opened June 14. Not quite your cocktail bar, but with it's funky decor and vast range of local beers, it is certainly worth a visit. Located where Small Bar used to be, Beelzebubs will attract a range of cliental, all of which will love the independent quirky vibe which the bar has to offer.

Not only this, the co-founders managed to crowdfund £28,000 which just shows the support the craft brewers have behind them.

They have 10 local beers from Crafty Devil, but also 14 keg lines which showcase beer from all around the world. Beelzebub’s is definitely worth a visit if you love beer, cider, wine or spirits – there is something for everyone!

 4. The Botanist

  Already established in 15 other locations, this will be the first venture into Wales. A secret garden cocktail bar is going to be opening soon on Church Street and we cannot wait.

The Botanist serves a range of themed cocktails, each botanically-influenced, served in an array of watering cans and plant pots – ideal for those with green fingers. Along with cocktails, The Botanist will also have a full gin list which can also be served as gin carafes. Ideal for sharing. They will have an extensive drinks menu for those of you who prefer craft beers, ales, wine or bubbly.

Food-wise, The Botanist has a good menu with nibbles, starters, mains and desserts. They have also got something for the kids and a non-gluten menu – there really is something for everyone.

5. Fly By Night

 A completely new wine and cocktail bar experience is coming to the High Street in Cardiff.. They have a wine menu which has been carefully selected which is continually changing to make sure there is always something new. With 25 different wines to choose from, wine drinkers will be spoiled for choice.

Many of the wines are served by the glass and very affordable so everyone can enjoy some fine wine. All this can be enjoyed with nibbles which range in price from 50p to £2.50.

Fly By Night will also have a cocktail menu with 20 different cocktails all based on the planets and moons within our solar system.

From the sounds of things the décor is going to be exciting and unique. Rumours of visual effects, a giant cherry blossom tree and a Mad Max-style underground bar. All is going to be revealed so watch this space!

6. Nest 23 Cardiff

 An independent cocktail bar on St. Mary’s Street which is having a revamp of its décor and soon to be reopening.

Nest 23 is mainly focused on cocktails and spirits with a wide range of both including gin, rum and whisky, all of which can be served as sharing boards. Perfect for all social occasions.

They are also big fans of prosecco and you are able to ‘pimp your bubbly' with a wide selection of fruit to decorate and tingle your taste-buds.

To accompany your cocktail or fizz they have a range of freshly made sharing boards.

Swansea Street Food festival is coming back!

Street Food Warehouse returns for a bank holiday (5th-7th May) weekend of foodie fun alongside an ice-cold pint of local craft beer, a fresh zesty Mojito or a sweet honey tequila - one of many of our specialities prepared for this event.

Mañana

With the fresh, earthy and dry blanco at its heart, Cazcabel honey adds a dose of sweet nectar to the blend. The honey used in Cazcabel Honey is made with a combination of manuka and yukatan honey sourced from the fields of Yukatan in Mexico and the Maunka trees of New Zealand.

TASTE PROFILE:

Rich and sweet with beautiful notes of warm natural honey.
Aroma is quite earthy; honest honey aromas promise a hint of sweetness.
Finished with caramel and smoky notes.

HOW WE PREPARE

Shake the Cazcabel Honey tequila, lemon juice and bitters, pour straight into a highball glass and top up
with ginger beer. Add lemon to garnish.

 

Cut Spiced Rum

Cut Spiced Rum is made with a blend of rums distilled in Jamaica and Trinidad, blended with a selection
of botanicals to enhance the flavours. This includes cinnamon, lemon, coriander seed, ginger, pepper, vanilla and aniseed. 37.5% of premium carribean rum infused with real spices.

TASTING NOTE

Bold and creamy with bits of pepper vanilla, sea salt and caramel.
On the nose, toasted orange, pancake batter and vanilla bean.

DIY Valentine's Day - Three Course Meal & Cocktails

In light of the fact that it is Valentine's Day on Wednesday, we teamed up with Street Food Warehouse to bring you the perfect three-course street food meal compiled by some of the country's best street food vendors with accompanying recipes for some delicious cocktails. Panic over - Valentine's Day is sorted!

Starter: Chicken Satay with Peanut Dipping Sauce

What better way to kick off your Valentine’s Day meal than with some tantalising Thai Chicken Satay skewers from the lovely Tiny Thai?! Nutty, moreish and as tasty as they come!

Chicken Skewers

Ingredients:

  • 10 x 7 inch bamboo skewers
  • 2 breasts will make 10 large skewers
  • Half a can of coconut milk
  • 1 tbsp ground/dried coriander
  • 1 tsp turmeric
  • 1 tsp salt
  • 2 tsp vegetable oil

Method:

  • Slice chicken into long thin strips OR into small bite size pieces with gloves (to avoid turmeric staining skin) mix ALL ingredients in a bowl and allow to marinate for at least 1 hour (longer to strengthen colour)
  • Preheat oven to 200 degrees
  • Skewer chicken slices, leaving 2-3 inches at the bottom for holding  
  • Lay skewers flat on a tray, avoid overlapping
  • Cover with tin foil and cook for 20 minutes (if you want to keep for another time or prep in advance, the skewers can be frozen from this point once cooked - these can be defrosted then follow the next step to be served)
  • From the oven, warm a griddle pan with 1 tsp of oil and grill skewers for 1-2 mins on either side until char marks appear
  • Serve with peanut sauce on the side for dipping

Peanut Sauce

 Ingredients:

  • 1 tsp red curry paste
  • 2 tbsp veg oil
  • Half a can of coconut milk
  • Hand full of crushed peanuts
  • 2 tbsp sugar
  • 1 tsp salt

Method:

  • In a saucepan warm vegetable oil and mix in red curry paste on med-low heat
  • When the curry paste starts to sizzle, mix in the coconut milk and bring to boil
  • Mix in peanuts, sugar and salt (add more to your preferred flavour)
  • Allow to cool to thicken sauce and serve warm

Cocktails

"Muay Thai Love"

Ingredients:

  • 60ml gold rum (2 healthy shots)
  • 2 sticks of lemon grass
  • Fresh Lime (half for each)
  • 30ml Coconut water (a healthy shot)
  • 20ml Ginger Syrup (just under a shot)

Method:

  • Muddle one stick of lemongrass in a shaker
  • Add cubed ice, the rum, coconut water, ginger syrup and squeeze half a lime into the shaker
  • Shake vigorously for 30 seconds
  • Strain into a whiskey glass (ice is optional)
  • Place a wheel of lime and the remaining lemongrass to garnish  

OR

"Honey I’m Home"

Ingredients:

  • 60ml Gin
  • 1tsp Honey
  • Fresh lemon (¼ fresh lemon to be squeezed, one wedge for garnish)
  • 1 Premium bottle of beer
  • Hot water  

Method:

  • Melt the honey with a splash of hot water (use a tea cup if you do not have a mixing glass)
  • Allow to cool
  • Fill a tall class with cubed Ice
  • Pour the Gin, dissolved honey mix, squeeze the fresh lemon and mix well
  • Top with beer and add a wedge of lemon to garnish

 

Main Course: "Waiting for Coddot" Fish Tacos

Nothing says Valentine’s Day like homemade fish tacos! The amazing street food vendors The Bearded Taco have generously given us this recipe for one of their most popular dishes “Waiting for Coddot”. Fresh and crunchy beer battered fish tacos alongside a honey and lemon slaw with lashings of Chipotle tartar sauce. A sure fire way to impress that special someone and incredibly zingy and delicious!

Corn Tortillas

Ingredients: Approx. 10/12 tortillas

  • 1 x cup of masa harina (available online or in a Mexican shop)
  • 1.25 x cup of warm water
  • 1 x tsp salt

Method:

  • Mix all above ingredients together in a medium sized bowl with your hands and knead until it forms a soft dough (approx. 10 mins)
  • Use a weighing scale to measure the dough into 40g balls or just divide dough into 10/12 equal-size balls
  • Press each ball into tortillas using a 6 ½ inch tortilla press (if you don’t have one you can also improvise with a rolling pin or your hands)
  • Preheat a large skillet (cast iron works best) over medium-high heat. Place tortillas into the hot skillet and allow to cook for approximately 30 seconds, or until browned and slightly puffy. Turn tortilla over to brown on second side for approximately 30 seconds more, then transfer to a plate. Repeat process with each ball of dough. Keep tortillas covered with a towel to stay warm and moist until ready to serve or wrap in cling film until ready to heat later.

 

Fish Finger Tacos:

Ingredients: Approx. 10/12

  • 10/12 corn tortillas (available in most supermarkets or use recipe above if you would like to make your own!)
  • 1 x kg sustainable white fish (e.g. cod / haddock / hake)
  • Vegetable oil, for frying

For the Beer Batter:

  • 225g self raising flour (swap out for gluten free self raising flour to make gluten free, available in most free from sections at supermarkets)
  • 330 ml beer (lighter beer works best, again use a gluten free beer to make this recipe suitable for gluten allergies)
  • 1 x tsp dried thyme

For the Honey and Lemon slaw:

  • 1/2 head Napa or similar cabbage - shredded
  • 1/4 head red cabbage - shredded
  • 1 x med carrot - shredded
  • 1 x small green apple - grated
  • 1 x tbsp honey
  • 1 x lemon - juice & zest
  • 3 x tbsp rice wine vinegar
  • Pinch of salt or more to taste

For the Chipotle Tartar Sauce: - (please note they usually make this from scratch but recommend using a jar of mayonnaise for ease)

  • 1/2 cup of mayonnaise
  • 1 x cloves garlic
  • 1 x tbsp white wine vinegar
  • 1 x chipotles chillies (or 2 depending on desired heat level)
  • 1 x tbsp capers
  • 1 x tbsp fresh chopped parsley
  • Pinch of salt or more to taste

Method:

  • Portion the fish into 10/12 equal slices (about the length of the tortilla)
  • Heat oil in a large frying pan or tabletop fryer to 185°C
  • For the slaw: in a large bowl combine the shredded cabbages, carrots and apples. In a separate small bowl mix together the honey, lemon juice, lemon zest, rice wine vinegar and salt until the honey is completely mixed in. Add the dressing to the slaw and mix well
  • For the chipotle tartar sauce: in a food processor or blender, combine the mayonnaise, chipotles, garlic, white wine vinegar, capers, fresh chopped parsley and salt until smooth; transfer to a small bowl or squeezy bottle if you have one
  • For the fish: in a large bowl, whisk up flour with the beer and thyme into batter. Dredge fish pieces in flour, dunk into batter and fry a few pieces at a time to deep golden brown. Salt fish when they come out of the oil, while they’re still hot. Keep warm in a moderate oven on a wire rack set on a rimmed baking sheet if not serving straight away
  • Warm your tortillas in hot, dry skillet or over a burner flame
  • Serve fish with tortillas and fixings on top when ready. Finish with fresh chopped coriander and a wedge of lime to squeeze on top

Cocktails

"Havana Good Time"

Ingredients:

  • 60ml any Rum of choice (we personally use Havana club 7)
  • Fresh Lime (half for each cocktail)
  • 25 ml Sugar Syrup (1 shot)

Method

  • Pour rum into shaker with half a fresh squeezed lime and sugar syrup
  • Shake vigorously for 30 seconds
  • Strain into a coupe (a wine glass can be used if you don’t have a coupe)

OR

"Life's a Beach"

Ingredients:

  • 50 ml Gin (two shots)
  • Fresh lime (¼ per cocktail)
  • Coconut Water (to top)

Method:

  • Pour your gin of choice into a tall glass over ice (preferably crushed ice)
  • Top up with coconut water
  • Use a cocktail spoon or a fork to swizzle the cocktail together
  • Add a slice of fresh lime to garnish  

            
Dessert : “Lovers Cheesecake”

Last but certainly not least we have something sweet to round off the evening. Urban Cheesecake have donated this amazing cheesecake recipe which is sure to impress. Creamy white chocolate cheesecake topped with indulgent chocolate truffle ganache and strawberries! If that doesn’t make your mouth water, we don’t know what will!

Ingredients:

  • 500g melted white choc
  • 500 ml double cream
  • 500ml cream cheese
  • 1 packet ginger biscuits
  • 50g salted melted butter
  • 200g dark chocolate
  • 20g butter
  • 100ml double cream
  • 1 x punnet of strawberries

Method:

  • Smash the biscuits to bits and stir in the melted butter and press down firmly in 8 inch spring form cake tin, chill for an hour.
  • In large bowl, soften the cream cheese the add the double cream and whisk with an electric whisk until combined, add the melted choc and whisk to form a smooth cream texture, pour in to the tin, smooth the top and bung in the fridge for a couple of hours to set.

To Serve:

Make the ganache, break the dark chocolate and place in a mixing bowl, gently heat the cream just as it starts to boil pour all over the broken chocolate, add the butter, using a wooden spoon bring it all together to create a silky shiny decadent chocolate sauce! pour over the cheesecake and top with strawberries! Save some sauce for dipping strawberries and feeding to each other for the perfect evening of romance!

"Two’s Company"

Ingredients:

  • 50ml Vanilla Vodka
  • 25ml Baileys
  • 25ml Kahlua
  • 25ml Disaronno
  • Cream  

Method:

  • Pour Vanilla Vodka, Baileys, Kahlua, Disaronno and the cream into a blender
  • Add cubed ice
  • Blend for 30 seconds
  • Pour into a fish bowl
  • Add 2 straws and ribbed condom (For her pleasure) to garnish

OR

"Slippery Nipple"

Ingredients:

  • Sambuca
  • Kahlua
  • Grenadine

Method:

  • Pour a small amount of sambuca into a shot glass ( about half way)
  • Use the back of a teaspoon and slowly pour Baileys down the back of the spoon to layer.
  • Add a small drop of grenadine in the center to create a nipple

How much booze do you buy for your wedding?

While planning your wedding, you will hit a fair few brick walls. How much booze to buy is usually one of them. Let us try and help you...

What to buy

First things first, decide exactly what alcohol you'd like to buy. Sit down and write a list of all liquids you think you need. This will depend on your venue as some venues provide, for example, a glass of bubbly before the reception or a bottle on each table. However, if you are providing the whole thing, day and night, or have been asked by your bar hire company what you want, you'll need to decide early on, for the sake of your budget.

A free bar doesn't mean a lot of choice, and your guests will know that. The more you try and offer, the more expensive and difficult it'll become. We suggest wine, beer, select spirits, and soft drinks

Your shopping list could consist of the following:

  • White wine
  • Red wine
  • Lager
  • Ale (preferably real, from a keg)
  • Vodka
  • Gin
  • Whisky
  • Mixers and soft drinks (cranberry juice, coke, lemonade, tonic water, soda water, lime cordial)

We hope you agree with us when we say this is the ideal booze shopping list!

How much to buy

It is really difficult to know how much booze to purchase. Buy too much and you'll be drinking lime cordial for years. Buy too little and you'll have guests wandering around with no drink in their hands to clutch, not to mention they could leave your wedding sober (!). There's no solid way of calculating exactly how much you will need, it depends on a number of things: how many guests, how many hours your wedding will be, how wide the choice, and of course, how much you friends and family can drink.

The best way to know how much is to talk to others. Track down someone who has had similar size wedding to you and ask them. Failing that, we've done some research and found this:

One couple had 120 guests and spent £2400 on alcohol:

  • 80 bottles of red
  • 80 bottles of white
  • 60 bottles of prosecco
  • 6 bottles of 1L gin
  • 6 bottles of 1L vodka
  • 3 bottles of 1L whiskey
  • 2 bottles of sambuca

This is excluding beer and soft drinks which they bought from the venue. The also said they did a semi-free bar i.e. after a certain time they charged £1 a drink which they made £300 on. In the end, they said they spent £1900.

This is a well stocked bar that didn't run dry with some pretty hardcore guest, all in all, a successful bar.

Pop Up Bar Hire have done their research and predict 5 key drink trends set to be poured in most cities in 2018. Read on to find out what they are.

 

Protein-based beverages

 One popular, affordable protein source is whey protein, which is usually in powder form and can be mixed with any liquid drink (water/milk) to make a protein shake. So if you enjoy having a protein shake for breakfast with a banana, or frozen berries blended in, then may we suggest a protein cocktail? Protein will continue to grow in 2018, being ever more popular for athletes but will also appear in cocktails. A scoop of chocolate whey in your espresso martini? This is one we will be experimenting with in 2018.

 

Year of the keg cocktail

We’re seeing a few keg cocktails being chatted about on social media. They’re not new, but they are being worked on. By using premium ingredients, they will take longer to produce and require more work, however, they will taste better, be worth more and make the end cocktail a work of art.

 

Cocktail history

Vintage cocktails will get new lease of life in 2018 with antique spirits making a comeback. They’re a little more pricey, but for a cocktail with 1960s Campari within, we can’t really complain, can we? Plus, vintage cocktails are exciting to receive in all their glory.

 

Frosé please hosay

Frosé became one of the drinks of the summer and is planning on keeping that title in 2018. Letting your inner-child out and having an alcoholic slushy being on trend is probably one of the best things to come of the summer of 2017, long let it remain. Wine slushy? Keem em’ coming poolside waiter!

 

Sweet alcohol

Some of us prefer a sweet alcoholic drink, while others choose to have it now and again. Nevertheless, the market for sweet alcohol is growing year after year and 2018 will be no different. Dessert-inspired spirits will provide a hit of sweetness to anyone on the hunt for a tasty drink with a sugar rush, reminiscent of confectionery and patisseries. Keep your eyes peeled for red velvet, cheesecake and clotted-cream flavoured gins and vodka.

What to do if it rains on your big day

What do you do if it rains on your big day? It’s the thought we all have when it comes to planning any event, especially if it’s outside. Especially if it’s a wedding.

Unfortunately, for couples in the UK, it’s hard to tell what the weather is going to do, not matter what time of year it is. Damn our unpredictable British weather, ey? While we can’t control the weather, we can definitely share some advice and do a little sun dance on the morning of your event…

  1. Shelter those guests

Hire a red carpet (or whatever colour matches your theme) and a marquee walkway to shelter you and your guests from the cars into the venue. They look snazzy and will keep everyone dry and happy.

  1. Provide a basket of umbrellas

Buy a white tin bin and fill it with pretty umbrellas for your guests to use. You could write on a chalkboard, “For rain or shine”. They also add to gorgeous wedding photos, if it’s raining or sunny.

  1. Have stands and buckets

If it is raining, your guests will have wet coats and drippy umbrellas. Make sure they’re not draping them over your beautifully decorated chairs and pop some coat stands near the entrance and buckets for umbrellas.

  1. Bring in the blankets

Buy a few blankets, roll them up, tie some string around them and pile them up in a wicker basket. They look beautiful and will keep your guests warm and cosy if it’s cold and raining outside.

  1. Light me up

Hire a large open fireplace for an out of season wedding and keep everyone warm. We could even bring in some warm, mulled cider to keep everyone’s insides warm. Yummy!

5 staff secrets to queue jumping at a bar

Is there anything worse than standing in a queue when you’re parched? Well, yes, but at that moment in time, no. Lots of things go through our heads, including elbowing every person in your way to the bar. We’ve spoken to the experts (that’s our bar staff!) who have revealed the best ways to get served first. So grab yourself a drink and take in these queueing revelations.

1. Choose your spot wisely

There are a few do’s and dont’s of picking your location when it comes to bar queueing. Don’t stand directly behind a pole/ break in the bar or on the corner of the bar, you will get stuck and have to push your way into the queue, making everyone around you think you’re jumping the queue, not cool.

Pick a spot that’s close to bar taps, ice buckets or a till, as the staff are constantly returning and they should notice you, acknowledge you and remember you.

2. Maneuver your body

Now that you’re in the perfect spot in the queue, you’ll still need to get to the bar. When you’re one or two people away and you see someone starting to pull away from the bar, shove your arm in subtly and swing your body to the side to let them out, then take their position. Sounds like we’re directing a car, but trust us- it works!

When you’re there, keep facing forward and stand tall and straight. You don’t want to be rude, but you have rightfully queued for that drink, so you’re getting it.

3. Attention

You’re so close, the tips have worked so far and now it’s time to get the staff’s attention. We don’t mean clicking fingers, shouting, waving money in their faces or getting up on the bar (although that will catch their attention and get you thrown out!).

Be patient, make eye contact, smile, and be respectful.

4. Pick a personality

There are two ways you can go about getting a drink when you’re at the front. You’ve got to be quick, as soon as a member of staff is free, blurt out your drink order. If you get a look from the person next to you who has been waiting for ages, then they need to toughen up.

Or, you could pass the staff onto that poor soul and hopefully it’ll come round to you. We know which one we’d rather do...

5. Buddy up

All these steps are much more effective when there’s more than one of you. So grab your mates who are saving the table and get them involved.

How to survive the clean up after your event

We’ve all been there: 16, had a house party where too many people have turned up, and had a boogie and enjoyed the night, only to wake up the next morning with a banging head and a crazy amount of cans, rubbish and mud trodden in the carpet. Well it’s still the same when you’re 26, 36, and on and on. When you host your own event, you want the cleanup to be as smooth as possible, so here are the key steps to keep it as simple as possible.

Step 1 - Preparation

This is key, if you are organising your own wedding, birthday party or a work event, you will need to think about the cleanup long before the dos date. Write a list of everything that will need throwing away, tidying up or sending back because you will need to sort out how/ who/ where/ when it’s going.

Step 2 - Hire a team to do it for you

Ask your friends, family, colleagues (if you trust them enough!) and nearest and dearest whether they will lend a hand in the run up and run down of your event. You’d be surprised the amount of people close to you who are willing to help.

Step 3 - Organise wheelie bins

They may not be the best looking feature of your event, but there is no doubt they are an essential. Do this in advance to find the best possible price. Step 4 - Think of other rubbish

It’s all and good having general waste bins dotted around, but what about cigarette butts?! Have some buckets around your site- you could personlise them in keeping to your events theme!

Step 5 - Recycle all you can

Recycling will reduce the amount of wheelie bins you need and will make you look like an enviromental star. You could even recycle the glasses and ensure everyone uses the same one all day- we don’t think this is unreasonable at all!
